However we can only reap the full benefits of garlic's health properties if we crush garlic and then allow it to sit for a period of 5-10 minutes. I'm going to explain below why this is so. The reason for this is: Garlic contains 2 chemicals - the sulfur containing compound alliin & the enzyme alliinase. Both these compounds are in the cells of garlic but separated from each other when garlic is in unbroken state. When garlic is crushed/minced/chopped fine, the cells walls break and these two react with one another and form a compound allicin which not only is the reason for the crushed garlic's strong aroma and bite, but more importantly for the increased health benefits now in terms of its anti bacterial, anti cancer and cardiovascular benefits. It has been found that 10 minutes is the maximum time these 2 chemicals need to form the total allicin that can form. Therefore garlic should be allowed to sit for 5 to 10 minutes after crushing/chopping/mincing. To ConcludeIt will certainly benefit your health many times more if you crush.chop/mince garlic and allow it to sit for 10 minutes, or at least 5 minutes before using it.
